Italian Soup



Date Nut Cake

Date Nut Cake

- 1 pkg dates cut up
- 1 cup hot water
- 1 tsp. baking soda 
mix these 3 items together

- 1/2 cup butter
- 1 cup sugar
- 1 Tbls cocoa
- 1 tsp vanilla
cream these 4 items together
 
mix everything together and add 1 3/4 cup flour add small bag walnuts and 1/2 pkg chocolate chips.
 
Bake in 8 1/2 by 9 inch glass pan at 350 for 30 minutes.

Pigs in a Blanket

Pigs in a Blanket

- 2 lbs Ground Chuck
- 1 lg. onion chopped
- salt and pepper to taste and any other seasonings you like
- 2 8oz cans tomato sauce
- Mix well and fill cabbage leaves
 
Place water in bottom of kettle then pigs then top with another can of tomato sauce.
Cook on low heat for about 2 hours.

Coffee Cake


Coffee Cake

- 2 pkgs (Rhodes brand) of yeast rolls 18 total
 
Place in greased bundt pan 
- pour in 1 pkg dry butterscotch pudding mixed with 1/2 cup brown sugar and cinnamon (to taste).
- top with pecan halves mixed with corn syrup.
 
Let rise then bake 25-30 min at 350.

Minestrone Soup

 
Cut 4 slices of bacon into 1/2 inch pieces-fry in deep soup kettle 
- add 1 large chopped onion and 2 garlic cloves minced...sauté until limp.
- add 4 large carrots - cut up
- 6 celery stalks - cut up
- 1/2 lb fresh green beans - cut in half
- 1 16 oz can tomatoes
- Cover with water - add beef bouillon to taste (8 to 10 cubes) Simmer for 2 hours
 
- add 2 potatoes cubed
- 1 zucchini cut up
- 1 can kidney beans and 1 can garbanzo beans
- 1- 10 oz pkg frozen pease
- 1 pkg chopped frozen spinach
 
Cook to a boil then add as much spaghetti noodles as you like. Serve with Parmesan cheese.

Blue Spruce Inn Cream of Broccoli Soup


Blue Spruce Inn Cream of Broccoli Soup

4 teas. butter
1 clove garlic crushed
1 med size onion chopped
1/2 cup celery chopped
1 small carrot chopped
1 cup water
3 cups chicken broth
1/2 cup heavy cream
1 cup half and half
2 large heads broccoli chopped
1/2 cup butter
1/2 cup flour
1 Tbl. worcesterchire
Sweet basil, thyme, parsley, salt and pepper to taste.
Simmer til vegetables are soft. Top with Sharp Cheddar Cheese.

Pizza Bread

This one was a favorite growing up.

Frozen French or Italian Bread Dough. 
Let dough rest after rolling it out. Then place on cookie sheet. 
 
Layer on top:
- Crushed plum tomatoes just using pulp not liquid
- 2 cloves crushed garlic
- 1 large onion sliced thin
- salt, pepper, oregano
- top with half can of parmesan cheese and sprinkle corn or olive oil on top.
 
Bake at 350 for 15 min. on center rack then 15 min. lower rack.
